Combine peanut butter, curry powder and soy sauce &lt;br /&gt;2. Slice mushroom and tempeh thin &lt;br /&gt;3. Crush and chop garlic &lt;br /&gt;4. Dice tofu into roughly 1-inch cubes.&lt;br /&gt;2. Reheat the same oil as in the previous recipe (or use new oil if you prefer).&lt;br /&gt;3. Fry tofu cubes in hot oil until slightly golden on the outside.&lt;br /&gt;4. Boil noodles with adequate water until soft, then remove from heat.&lt;br /&gt;5. Pour cold water over noodles and drain.&lt;br /&gt;6. Add deep fried garlic to noodles.&lt;br /&gt;7. Combine coconut milk and soy sauce.&lt;br /&gt;8. Chop shallots and pineapple small.&lt;br /&gt;9. Chop kale or broccoli and steam for two minutes so that they are hot, but still crunchy.&lt;br /&gt;&lt;br /&gt;You can either serve all these ingredients separate, allowing everyone to combine everything according to their own tastes or combine them and serve ready.&amp;nbsp; What you should have now is:&lt;br /&gt;&lt;br /&gt;1. Photo courtesy of Olga Barmina)&lt;/div&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;1 can (340g) corn&lt;br /&gt;1 tsp baking soda&lt;br /&gt;250 ml flour&lt;br /&gt;40 ml soy sauce&lt;br /&gt;100 ml water&lt;br /&gt;5 kaffir lime leaves&lt;br /&gt;5 cloves garlic&lt;br /&gt;&lt;br /&gt;100 ml vinegar&lt;br /&gt;100 ml palm sugar&lt;br /&gt;5 shallot&lt;br /&gt;70 g cucumber&lt;br /&gt;20 ml coriander seeds&lt;br /&gt;1 stalk coriander&lt;br /&gt;2 chillies&lt;br /&gt;&lt;br /&gt;1. Combine vinegar and palm sugar and mix until sugar is thoroughly dissolved.&lt;br /&gt;2. Finely chop shallots, chilli and stalk of coriander.&lt;br /&gt;3. Thinly slice and quarter the cucumber.&lt;br /&gt;4. Crush coriander seeds.&lt;br /&gt;5. Combine all ingredients and place aside while you prepare the tod mun.&lt;br /&gt;&lt;br /&gt;1. Crush and finely chop garlic and place it in a wok with plenty of oil for deep-frying.&amp;nbsp; Do not heat yet.&lt;br /&gt;2. Combine flour and baking soda.&lt;br /&gt;3. Add water and soy sauce and mix to get a thick paste.&lt;br /&gt;4. Chop chillies and kaffir lime leaves very fine, then add to paste.&lt;br /&gt;5. Thoroughly drain corn and add to flour mixture.&lt;br /&gt;6. Mix thoroughly.&lt;br /&gt;7. Heat up oil in wok and fry garlic until golden.&lt;br /&gt;8. Remove garlic from oil and set aside.&amp;nbsp; The heat should be hot, but not at full temperature.&amp;nbsp; 4/6 on an electric stove is good.&lt;br /&gt;9. Using two spoons, form paddies with the batter.&lt;br /&gt;10. Deep-fry three at a time until done.&lt;br /&gt;11. Remove from oil and place on paper-towels to absorb excess oil.&lt;br /&gt;12. Repeat steps 9 to 11 until all the batter is finished.&lt;br /&gt;13. (Picture coming soon!)&amp;nbsp; My baby liked it, too, when I made a less salty version of it - so it's also an easy thing to get the little fellows to eat!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;250 g macaroni&lt;br /&gt;3 tomatoes&lt;br /&gt;200 g brocoli&lt;br /&gt;100 g philadelphia cream cheese (I recommend a flavoured one like garlic and chive, or herbs - I used tofutti garlic and chive flavoured soy-based creamcheese, but it's your call!)&lt;br /&gt;100 g 'grate-able' cheese (I used an edam-flavoured soy cheese)&lt;br /&gt;&lt;br /&gt;1. Preheat oven to 175 degrees.&lt;br /&gt;2. Boil macaroni in plenty of water and oil. &lt;br /&gt;3. Dice tomatoes and put them in a pan.&amp;nbsp; Add a teaspoon of salt and let simmer for some minutes.&lt;br /&gt;4. Chop broccoli fine and add to tomato.&amp;nbsp; Take off heat.&lt;br /&gt;5. When macaroni is done, drain water.&lt;br /&gt;6. Add cream cheese and tomato-broccoli sauce to macaroni.&lt;br /&gt;7. Grate cheese evenly on top.&lt;br /&gt;8. Boil the dry soy chicken and pasta with 3-4 dashes of soya sauce and a tbsp of cooking oil until soft.&lt;br /&gt;2. Remove from heat, drain water, and let cool. &lt;br /&gt;2. Chop the apple and asparagus.&lt;br /&gt;3. Combine apple, corn, sesame seeds, olives, asparagus, chickpeas, spinach, basil, soy chicken and pasta (once cooled).&lt;br /&gt;4. Place dried mixed beans in a pot and add water.&amp;nbsp; Soak overnight.&lt;br /&gt;2. About 2 hours before serving, add veg stock cube and coriander root to pot and bring to a gentle boil.&lt;br /&gt;3. Crush and chop the garlic and onion and add to pot.&lt;br /&gt;4. Chop carrots and tomatoes and add to pot.&lt;br /&gt;5. Let gently bubble over a low heat for about an hour.&lt;br /&gt;6. Chop the zucchini, paprika and mushrooms and add to the pot with the oregano.&lt;br /&gt;7. Wait about 10 minutes and then add salt to taste.&lt;br /&gt;8. Allow soup to continue simmering until time to serve.**&lt;br /&gt;9. Remove from heat and add olive oil, balsamic vinegar, basil and pepper.&lt;br /&gt;10. Slice eggplant thin, sprinkle with some salt and set aside for 10 minutes.&lt;br /&gt;2. In a small pot, boil texturised soy protein with water until soft, then remove from heat.&lt;br /&gt;2. Crush and finely chop garlic.&lt;br /&gt;3. Heat plenty of cooking oil in pan and add pepper to it.&lt;br /&gt;4. Fry for about half a minute.&lt;br /&gt;4. Add half the garlic and fry until golden brown.&lt;br /&gt;5. While waiting for garlic to brown, dice tomato.&lt;br /&gt;6. Add tomato to pan and stir-fry for about two minutes&lt;br /&gt;7. Rinse eggplant and add to pan, continuing to stir until eggplant is soft.&lt;br /&gt;8. Add the texturised soy protein and soy sauce, lower the heat and let simmer on a low heat.&lt;br /&gt;9.  Meanwhile, add the remaining garlic, coriander, olive oil, water and herbal salt to the yoghourt and mix well.&lt;br /&gt;10. Soak beans in enough water just to cover them overnight (12 - 24 hours) or use precooked beans&lt;br /&gt;2. Add 1.5 litres of water, carrot, radish and stock cube to beans in a large pot.&lt;br /&gt;3. Turn on heat and bring to a boil.&lt;br /&gt;4. While waiting, crush and chop garlic and onions, and add to soup, along with coriander root.&lt;br /&gt;5. Once water has boiled, lower heat and let boil gently under lid in medium to low heat.&lt;br /&gt;6. Dice tomatoes and paprika and put them in the soup.&lt;br /&gt;7. Wait around 15 minutes and slice zucchini and mushroom and add to the soup.&lt;br /&gt;8. Let simmer for another 30 minutes.&lt;br /&gt;9. Add salt to taste.&lt;br /&gt;10. Take off heat, and remove carrot and radish and coriander root.&lt;br /&gt;11. Add olive oil and fresh basil before serving.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;If you'd rather have your soup as a main, and not a side or  starter, then add a couple handfuls of penne in about 20 minutes after  you've added the zucchini and mushroom!&lt;br /&gt;Attn: &lt;b&gt;P'Sally&lt;/b&gt; - you wanted this as a broth for kids.&amp;nbsp; Since I think msg-free stock-cubes are not easy to find in Thailand, add a couple spoonfuls of sugar and more salt instead, as well as an extra tomato.&amp;nbsp; It's a pretty place, for sure, but unfortunately, the chef lacks any creativity and the waiters were fairly mediocre (for the price and location of the place, that is).&amp;nbsp; A restaurant where a full course meal for one will easily set you back 100 Euros (think starter, main, dessert and wine) should have quality and good service in addition to good presentation, which is about the only thing they mastered.&lt;br /&gt;&lt;br /&gt;So, there was a risotto on the menu.&amp;nbsp; I asked the waiter if a vegan version of it could be done (ie, without cream and/or butter).&amp;nbsp; He came back telling me that it could be done.&amp;nbsp; But what I finally got, after an HOUR of waiting, was a fairly sad affair.&amp;nbsp; A little dollop of mashed potato garnished with sugar snap peas and zucchini and two measly bits of beetroot on top which I could have gobbled down in four spoonfuls.&amp;nbsp; It was well presented... but errr... not what I ordered!&amp;nbsp; It doesn't help that I'm really not a fan of potato and I absolutely despise beetroot.&lt;br /&gt;&lt;br /&gt;So, in normal circumstances, this is where the waiter should apologize profusely and offer to a) make a new dish super fast, b) offer a dessert and/or tea/coffee on the house, c) offer some wine.&amp;nbsp; Basically, offer something to make up the totally botched up dinner.&amp;nbsp; But noooo... instead, he started going on about how the chef said it's impossible to make risotto without cream.&amp;nbsp; And that was that.&amp;nbsp; No apology, no nothing.&amp;nbsp; The prevailing attitude in Finnish restaurants is, unfortunately, if you have ANY special dietary requirements at all, then you will eat what's put in front of you, be happy, pay the extortionate sum and be eternally grateful to them for being able to throw together a dish that even the dogs wouldn't eat.&lt;br /&gt;&lt;br /&gt;But the thing that stuck to me most is "It's impossible to make a risotto without cream."&lt;br /&gt;&lt;br /&gt;I thought I'd try it for myself, even though risottos are not really my specialty.&amp;nbsp; Add the stock cube to the water you prepare the rice in.&lt;br /&gt;2. When done, set aside.&lt;br /&gt;3. Preheat oven to 210 degrees celcius. &lt;br /&gt;3. In a pan, fry the garlic in oil until golden brown.&amp;nbsp; Add rosemary.&lt;br /&gt;4. Add mushrooms and margarine and fry until the mushrooms are brown.&lt;br /&gt;5. Add zucchini and fry for another minute.&lt;br /&gt;6. Add salt.&lt;br /&gt;7. Add the spinach and the sun dried tomato and take off heat.&lt;br /&gt;8. Mix in rice and enough water to make the rice stick together (about 300 ml) and put back on heat for a minute with the lid on.&lt;br /&gt;9. Take off heat and add a handful of basil and the vinegar and mix thoroughly.&lt;br /&gt;10.&amp;nbsp; Scoop rice into paprika halves, filling them to the brim.&lt;br /&gt;11. Place remaining rice in a large greased baking bowl and place filled paprikas on top.&lt;br /&gt;12. Place anis, cinnamon, cloves, nutmeg, ginger, kaffir lime leaves and fennel in a small pot with a little bit of water and bring to a boil, then turn on low heat.&lt;br /&gt;2. Allow to simmer under lid as you prepare the rest of the ingredients.&lt;br /&gt;&amp;nbsp;*for best results, prepare herbal mixture an hour in advance &lt;br /&gt;3. Put one litre of water in a large pot, and add stock cube and soy sauce.&lt;br /&gt;4. Turn on medium heat.&lt;br /&gt;5. Dice tofu, slice zucchini and add them to soup, along with seaweed.&lt;br /&gt;6. Crush and finely chop garlic.&lt;br /&gt;7. Place in a small pan with a bit of cooking oil and fry until golden brown, then remove from heat.&lt;br /&gt;8. Chop coriander.&lt;br /&gt;9. Strain herb mixture through a sieve or tea-strainer, into the soup&lt;br /&gt;10. Those, for me, are instant noodle days...  But why settle for plain instant noodles?  Here's a little tip:  Keep some frozen dumplings in the freezer, texturized soy protein, instant noodles and dried seaweed in strips in the cupboard, and while your at it, next time you get fresh coriander, freeze a little of that, too. (I've got kimchi instant noodles)&lt;br /&gt;1 handful texturised soy protein strips&lt;br /&gt;4 frozen dumplings (I used mushroom dumplings)&lt;br /&gt;1 tablespoon chopped frozen coriander (fresh, if you happen to have it lying around!&lt;br /&gt;1 tablespoon seaweed flakes or a handful of dried seaweed&lt;br /&gt;1 teaspoon soysauce&lt;br /&gt;&lt;br /&gt;1. Open your instant noodle package from only one end, and empty your instant noodles and condiments into a pot.  Use the empty package to measure one full pack of water into the pot, and you'll have the right amount of water.&lt;br /&gt;&lt;br /&gt;2. Bring to a boil and then toss in the rest of the ingredients.&lt;br /&gt;&lt;br /&gt;3. Decrease heat by about half and let it boil for another 2-3 minutes.&lt;br /&gt;&lt;br /&gt;Hooray, it's done!&lt;br /&gt;&lt;br /&gt;Optional extras: Add a squeeze of lime and a bit of spring onion.&lt;br /&gt;&lt;br /&gt;About the ingredients:&lt;br /&gt;&lt;blockquote&gt;&lt;br /&gt;&lt;b&gt;Frozen dumplings&lt;/b&gt;:&amp;nbsp; Visit your Asian grocery's frozen foods section, and most have an extensive collection of frozen dumplings.&amp;nbsp; Check the ingredients, cos even if they claim to be 'vegetable dumplings', many will contain pork!&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Instant noodles&lt;/b&gt;:&amp;nbsp; There's NOTHING healthy in instant noodles, but sometimes we're just lazy.&amp;nbsp; Some at least make the effort to contain some dehydrated veggies, which is better than nothing, but certainly doesn't go very far in terms of adding to the health factor.&amp;nbsp; I'd recommend finding instant noodles at an Asian grocery, and not at a regular supermarket, because usually the selection is far better at the former, and the flavours are more 'authentic'.&amp;nbsp; Western instant noodles, sorry to say, often taste like plain boiled pasta.&lt;br /&gt;&lt;br /&gt;&lt;b&gt;Seaweed&lt;/b&gt;:&amp;nbsp; Great for iodine and also contains iron.&amp;nbsp; Available at any Asian grocer and health food stores.&lt;/blockquote&gt;&lt;br /&gt;&lt;br /&gt;p.s.&amp;nbsp; &amp;nbsp;Boil bulgur in about twice as much water as grains until the water has immersed and bulgur is soft.&amp;nbsp; Add olive oil and stir.&lt;br /&gt;2.&amp;nbsp;&amp;nbsp; &amp;nbsp;Remove from pan and leave to cool.&lt;br /&gt;3.&amp;nbsp;&amp;nbsp; &amp;nbsp;Cut tempeh into small strips and fry in cooking oil with a dash of soy sauce until brown.&lt;br /&gt;4.&amp;nbsp;&amp;nbsp; &amp;nbsp;Remove from pan and leave to cool.&lt;br /&gt;5.&amp;nbsp;&amp;nbsp; &amp;nbsp;Mix sesame seeds, water, olive oil, soy sauce and sugar.&amp;nbsp; Squeeze the juice from the lime and stir together until the sugar is dissolved to make the salad dressing.&lt;br /&gt;6.&amp;nbsp;&amp;nbsp; &amp;nbsp;When bulgur and tempeh are cool, add to spinach, basil, tomatoes and chickpeas.&lt;br /&gt;7.&amp;nbsp;&amp;nbsp; &amp;nbsp;Chop the avocado into cubes and add to salad before serving with salad dressing.&lt;br /&gt;&lt;br /&gt;About the ingredients:&lt;br /&gt;&lt;br /&gt;&lt;blockquote&gt;&lt;b&gt;Soy sauce:&lt;/b&gt;&amp;nbsp; Although the function of soy sauce is to add some salt to a dish, don’t replace it with salt!&amp;nbsp; Soy sauce also adds a fullness of flavour to the dish that, in the end, makes you require less salt.&amp;nbsp; It's the famed ‘&lt;a href="http://en.wikipedia.org/wiki/Umami"&gt;&lt;i&gt;umami&lt;/i&gt;&lt;/a&gt;’ flavour that can also be found in other ingredients such as tomatoes, tamarind, and, more notoriously, monosodium glutamate.&lt;br /&gt;&lt;br /&gt;Any aficionado of Asian cooking will tell you that it’s not all the same to use a Thai, Indonesian, Japanese or Chinese soy sauce.&amp;nbsp; Regardless of what country a soy sauce comes from, the preparation of it is slightly different, and the amount of salt and sugar vary.&amp;nbsp; My recipes require Thai soy sauce, unless otherwise specified.&amp;nbsp; Using a different soy sauce will result in dishes that are not balanced with other ingredients in the recipe, too salty, or too sweet.&amp;nbsp; If you are not located in Asia, most Asian groceries stock Thai soy sauce in both large and small bottles.&amp;nbsp; Look out for the 'fat baby' brand (both plain or mushroom flavoured are fine)&lt;/blockquote&gt;&lt;br /&gt;&lt;blockquote&gt;&lt;b&gt;Bulgur&lt;/b&gt;:&amp;nbsp; If you've eaten Mediterranean food, you'll probably be familiar with this ingredient.&amp;nbsp; In Turkey, it's used in salads such as tabouleh and kisir.&amp;nbsp; It's a very healthy wholegrain, usually made from durum wheat.&amp;nbsp; It's normally available from any well-stocked supermarket, but if not, try a Mediterranean store or an Indian store (under the name of daliya).&lt;/blockquote&gt;&lt;blockquote&gt;&lt;br /&gt;&lt;b&gt;Tempeh&lt;/b&gt;:&amp;nbsp; Used most often in Indonesian cooking, it's a sort of 'wholebean' tofu with a firmer texture and stronger flavour.&amp;nbsp; It's usually available at larger Asian stores, and sometimes at health food stores.&lt;/blockquote&gt;&lt;br /&gt;&lt;blockquote&gt;&lt;b&gt;Palm sugar&lt;/b&gt;:&amp;nbsp; Commonly used in South and Southeast Asian cooking, any Asian grocery, and some large supermarkets stock it.&amp;nbsp; It has a stronger, mustier flavour than cane sugar, and a higher nutritional value.&lt;/blockquote&gt;&lt;blockquote&gt;&lt;br /&gt;&lt;b&gt;Basil&lt;/b&gt;:&amp;nbsp; Slice 3 tomatoes and place in pot with margarine and cream.&lt;br /&gt;2. Turn on heat and keep on stove until the butter is melted, then remove from heat.&lt;br /&gt;3. Using a blender, puree the tomatoes.&lt;br /&gt;4. Dice the remaining tomato and cucumber.&lt;br /&gt;5. Finely chop the spring onion and coriander.&lt;br /&gt;6. Pour soup into a large bowl and add the tomato, cucumber, spring onion and coriander.&lt;br /&gt;7. Add herbal salt and pepper to taste.&lt;br /&gt;8.
